Due to constant shifting of wind etc, you should really be holding and adjusting all the time, not *sticking the nose to 231.5 degrees and letting go*. Finals with autopilot off should fly like any other plane, small adjustments for course and decent every few seconds, then cancelled out. I'v unfortunatley only ever flown a motion 747 sim, not an Airbus (and a real C172)

Hard? push the stick forward: nose goes down. Pull the stick backwards: nose goes up. Release the stick: attitude is maintained. I mean, it can't get much easier doesn't it? Fly by wire doesn't mean ofcourse that a child could steer the plane, but it really does make it easier.

Just as a reminder, there's more than 2000 A320 operated in the world those days... do you really think if those performances wasn't like in this video, company still order new A320 planes today ?

Basically what I'm saying is that if you get it at the right heading or altitude and level off, it will stay there, but it's so hard to get it to the right heading and altitude that it's almost not worth it. I know that Airbus is generally safer, and I'd probably feel safer in the cabin of an Airbus than a Boeing, but I prefer flying Boeings.

Holding altitude with autopilot off? It holds Attitude, Altitude then is controlled by Throttle. just like a normal plane (that's how I learned in a Cessna anyway, Pitch for speed, throttle for climb/decent rate).
